Zucchini & Squash Marinara

 

Zucchini & Squash Marinara over Whole Wheat Pasta
Ingredients

  • 2 diced tomatoes
  • 2 zuchini (unpeeled and diced)
  • 2 squash (unpeeled and diced)
  • 1/4 cup olive oil
  • 1 (15 oz.) jar of marinara sauce
  • 1 clove garlic
  • 1/4 tspn. basil leaves, chopped
  • 1/8 tspn. dired oregano
  • 1 cup (4 oz.)shredded monterey jack cheese
  • 6 cups cooked whole wheat pasta (1 cup per serving)
  • 4 oz. chicken breast (optional)


Directions

  1. Saute zucchini and squash in 3 tbsp. olive oil until lightly browned and drain.
  2. Combine marinara sauce, diced tomatoes, remaining oil, garlic, basil and oregano in a small saucepan, stir well
  3. Simmer for 15 minutes, stirring occasionally
  4. Add zucchini and squash, mix well
  5. Sprinkle cheese over sauce
  6. Serve over whole wheat pasta
  7. If desired, place sliced grilled chicken over dish.
